• 【Nitrided Iron Series： Advanced “Nitrided Iron” from the Artists of Heat】
• Nitriding is a technique to harden the surface of iron by diffusing nitrogen – a component of the air we breathe – on it with heat.
• 【the Benefits of a Nitrided Frying Wok】
• by hardening its surface the iron keeps a strength several times normal, so it's durable even when made thinner.
• the nitrided surface has a fine coarseness so it holds oil very well while cooking.
• the nitrided layer is resistant to rust making it easy to clean and good for woks.
• Like the iron pot, it makes fried rice, vegetables crispy, and meat savory and juicy.
